A strikingly beautiful food crop supplying a bountiful amount of deep red, leaves with stunning magenta flower spikes and seeds, all are edible. Young leaves are used fresh in salads like spinach, older leaves braised or stewed, seeds are similar to quinoa when harvested. Leaves can be blanched and put away for the winter. Can grow up to 8’ tall if allowed and will attract plenty of birds if left to seed. Heat and drought tolerant.
